Chef Enrique Lozano is a Chopped champion (“Heart and Sole”), a James Beard Foundation nominee, and a former Beat Bobby Flay competitor — a record built one shift, one fillet, one carefully composed plate at a time.
Born of the borderland between El Paso, Texas and Ciudad Juárez, Mexico, his cooking carries two coasts in one room: the Sinaloa–Nayarit seafood tradition his family fed him on, and the smoke‐and‐lime swagger of northern Mexico. Aguazul — “blue water” — is where those worlds set the table together.
His kitchen runs on two things: disciplina y generosidad. Discipline shows up in the precision of an aguachile cut against the grain. Generosity shows up in the size of a torre.
